Diplomová práce byla zaměřena na produkci biogenních aminů mikroorganizmy izolovanými během jednotlivých fází výroby tvarohu. Jednotlivé části práce se věnují popisu surovin pro výrobu tvarohu a jeho výrobě. Dále je zde popsána charakteristika a vlastnosti biogenních aminů, jejich výskyt v potravinách a působení na lidský organizmus. Produkce biogenních aminů byla u 155 mikroorganizmů izolovaných během výroby tvarohu detekována pomocí vysoce účinné kapalinové chromatografie. U mikroorganizmů izolovaných ze všech fází výroby tvarohu byla zjištěna především produkce tyraminu a sperminu. Spermidin byl stanoven pouze u 4 ze 155 zkoumaných izolátů, jeho obsah byl do 2,0 mg/l. Celková produkce biogenních aminů v analyzovaných mikrobiálních izolátech dosáhla maximální hodnoty 1971,9 mg/l. |

The present diploma thesis focuses on the production of biogenic amines by microorganisms which were isolated in different stages of the quark production. The thesis is divided into several parts describing ingredients for the production of the quark and the quark production itself. Moreover, characteristics and properties of biogenic amines, their occurrence in food and their impact on the human organism are described. Production of biogenic amines was determined by 155 microorganisms isolated during the quark production using the high-performance liquid chromatography. Especially the tyramine and spermine production were detected in microorganisms which were isolated in all stages of the quark production. Spermidine was detected only in 4 from 155 analysed isolates in the volume of 2.0 mg/l. The total production of biogenic amines in analysed microbial isolates reached the maximum value of 1971.9 mg/l. |
