V bakalářské práci je řešena problematika alergenů čeledi miříkovitých (Apiaceae), jsou popsány charakteristiky miříkovitých, jejich pěstitelské podmínky a jejich využití v potravinářství. Jedná se zejména o celer (Apium graveolens) a mrkev obecnou (Daucus carota). Dále jsou uváděny charakteristiky alergie, potravinové alergie a intolerance, reakce, dědičnosti, činitelé ovlivňující rozvoj alergií, projevy v lidském organismu, pojmenování, evidence a označování alergenů, konkrétní projevy alergií při konzumaci celeru a mrkve. |

The bachelor thesis solves the problems of allergens "the miříkovitých family" (Apiaceae), desribes the characteristics of "the miříkovitých family", their growing conditions and their utilization in the food industry. Especially it concerns the celery (Apium graveolens) and the carrot (Daucus carota). The thesis also refers to the characteristics of allergies, food allergies and intolerance, reactions, heredity, factors which are affecting the development of allergies, allergy symptoms in humans, naming, registration of allergens and allergens labeling, the specific allergy symptoms during consumption of the celery and carrots. |
