Tato bakalářská práce se zabývá aspekty výroby destilátů v pěstitelských pálenicích. Jsou zde podrobně popsány základní ovocné suroviny a jejich zpracování pro výrobu kvasu a destilátů, podrobně je rozebrána i problematika biochemie etanolového kvašení. Zmíněny jsou i základní legislativní pojmy v oblasti alkoholu. |
