dc.description.abstract	Tématem této práce je problematika sanitace a sestavování sanitačních plánů. Začátek je věnován evropské a české legislativě vztahující se k provozu potravinářských podniků, především mlékáren, a sanitaci v nich. Dále jsou zde přiblíženy druhy sanitace a sanitačních prostředků. Práce se zaměřuje na postupy čištění a dezinfekce a pravidla sestavování sanitačních plánů s konkrétními návrhy pro školní poloprovozní technologickou dílnu.

dc.description.abstract-translated	The theme of this work are sanitation issues and compilation of sanitation plans. The beginning is devoted to European and Czech legislation related to the operation of food businesses, especially dairies and sanitation in them. Furthermore, there are sanitzing agents described. The work focuses on cleaning and disinfection procedures and rules for drawing up sanitation plans with concrete proposals for pilot school technology plant.
